They currently come in two sizes, a 12×12 inch square, and a 12×24 inch rectangle for longer designs. Each mat has a ruler that runs around the border of the mat, designated in inches and centimeters, as well as a background grid in one inch squares. On top of the grid are eleven bold, concentric circles which measure diameter of the cake. This is helpful to gauge the size of your pattern. The larger rectangular mat, 12×24, has two sets of concentric circles on it, so basically it is like having two 12×12 mats fused together.

Most three dimensional flowers and designs of the like are made with this type of piping agent. Gum paste can be bought premixed in buckets or as a dry mix. You can even make your own. This can also be made into a variety of vibrant colors. The gum paste is rolled into sheets and affixed on top of the cake cutting mat. The mat is then placed into the machine and out pops your design, ready to be transferred to your cake.
